Approximately 8% of children, and 2% of adults suffer from true food allergies. When the culprit food is eaten most allergic reactions will take place within minutes. In October 1998, Jiao-Tong, literary editor of China Times in Taipei, Taiwan, asked me to write an essay on American literature, American food for the filing of the first international conference on food and literature, which was held in Taipei, May 1999. I thought I can not find a secondary source of many books on this topic. After extensive searches on the network side and the number of teachers of literature in universities in the United States and Canada, I was quite surprised, not a book for printing. Not only had no books, there was no article that is directly related to my topic. As secondary sources explains why most of the references to this essay is the main source. Limitations in time and space in writing to explain why I only have my review of American literature, novels, short stories and poems. I tried to make a representative sample of writers, short story writers, playwrights and poets, including nearly two hundred years of American literature from both sexes and different ethnic groups. Because there are so many versions of an original work that I bring, I have limited references to the author’s name, the title of the work and the inner part of the verse as a group or department and leave the page numbers in particular versions that I used . Lesser-known books, collections and anthologies become the standard format editing.
To bring some of this vast quantity of material that have created three themes around which I weave, I discovered some American food, American literature: the consistency and continuity, and purity and impurity, abundance and scarcity. These three themes enable a number of important truths about the American experience over time, make your own themes, and writers.
